Bistro Vue is the latest venture from Adam Hawke, whose career in hospitality spans decades and some of Australia’s most respected dining rooms. From senior roles at Aria and Flying Fish in Sydney to leading Flooded Gums at Bonville Golf Resort—where he earned its first Good Food Guide Hat—Adam’s reputation has always been built on consistent service, considered food, and genuine care for the guest experience.
For the past nine years, Adam was owner-operator of Shearwater Restaurant, a much-loved Coffs Harbour institution. When the site was slated for redevelopment, he saw an opportunity to create something smaller, more intimate, and more personal.
Bistro Vue is the result—a restaurant shaped by experience, crafted with intention, and deeply connected to place. It honours the legacy of what came before, while offering something new: a fresh perspective on dining in Coffs Harbour, rooted in care, community, and craft.
